Andrew Hong, known as Droo the Baker, has been establishing his identity through his innovative baking at Van's Bakery in San Jose. The bakery, founded by his parents in 1985, offers a fusion of Vietnamese, Chinese, and French pastries. In early February, Hong showcased his diverse baked goods at Albany's Morningtide. His offerings include a signature Vietnamese honeycomb cake and specialty cream puffs, reflecting his creativity. Upcoming pop-ups include various coffee shops across the Bay Area, as he continues to attract a local following with his artisanal approach to baking.
"For each one of his Droo pop-ups, he curates about a half-dozen items. One's going to be a type of cream puff. The flavor will change depending on the location."
"Droo's Vietnamese honeycomb cake is a bestseller. Tinged green from pandan, it's as light as an angel food cake. Air bubbles form in the batter when it bakes."
