Somewhere in the late 70's or 80's, red sauce was no longer cool. It was no longer authentic. Tuscan was 'in'. ... You could eat in Italian restaurants in New York for ten years and never even see red sauce. We were almost made to feel bad about any secret appetites we might retain for spaghetti and meatballs.
I was a horrendously picky eater as a child. My safe foods included peanut butter sandwiches, plain buttered pasta noodles, chicken nuggets, and similarly simple fare. My mother catered to my underdeveloped palate by testing, altering, and re-testing recipes to see what I would actually eat when it was placed in front of me. One day, she discovered what would soon become a favorite: Ritz crackers loaded with a generous helping of cream cheese.
All good things must come to an end. Or so the saying goes. Some might say that about beloved salad dressings that seem to have disappeared for no apparent reason. There are entire internet threads dedicated to finding old-timey dressings - either the store-bought ones in bottles and jars, or the ones grandma made for every potluck. To no avail. These dressings weren't just tasty for many people; thinking about them conjures warm, wonderful memories.
