Bucatini all'Amatriciana
Briefly

Amatriciana, a traditional Roman pasta dish, has become a hot topic of debate, mainly surrounding the acceptable ingredients, especially the contentious inclusion of garlic.
In 2015, when renowned chef Carlo Cracco revealed his use of garlic in amatriciana, it sparked outrage from culinary purists and the mayor of Amatrice.
The basic ingredients of amatriciana are guanciale and Pecorino Romano cheese, but variations exist with additions like black pepper and even onions, creating culinary divides.
Despite the traditional recipe, substitutes such as pancetta and unsmoked bacon can be used in amatriciana, along with a firm insistence on using whole canned tomatoes.
