The new location features a spacious 1,600 square feet that includes a 14-seat omakase counter and a four-seat express counter, aiming to serve diners promptly. Mayer stated, "The aim is to get diners in and out in 30 minutes," reflecting a focus on efficiency alongside quality dining.
With the introduction of new menu offerings like the Kaisendon bowl, which includes various seafood and is enriched with bone broth halfway through the meal, Mayer noted the emphasis on providing a unique dining experience. He described it as a way to enhance flavors, stating, "...which releases a new texture and umami flavor to the dish."
