Nigel Slater's recipe for apricot and coconut fool
Briefly

Put 300g of dried apricots and a litre of water into a saucepan, simmer, blend with coconut yoghurt, chill, and serve with cardamom and pistachios.
For a richer dessert, consider replacing half the coconut yogurt with cream, whisk until soft, and adjust sweetness with cooking liquid or icing sugar.
