Lentils are a great source of plant-based protein, and alongside the veggies and a side of carbs, they make for a filling and satiating dinner.
The stew can be served over noodles or rice or with a side of bread to make a heartier meal.
You can use chicken broth or bouillon cubes, but I've always liked that this is a vegan-friendly dish.
Basically, you can clear out whatever leftover produce you have in your fridge or freezer.
