I tried sweet-potato pie recipes from Trisha Yearwood, Alton Brown, and Carla Hall. The best had an easy homemade crust.
Briefly

Though the other recipes I tested called for premade pie dough or canned sweet potato, Hall's version of the pie didn't come with shortcuts.
Making the dough was a little time-consuming, but overall, it was one of the easiest homemade pie crusts I've made. The recipe also called for making pie dough from scratch.
Though the pie crust rolled out easily and looked flawless, I noticed the pie had cracks along the bottom. I had to hope the filling would be thick enough to not seep through.
In the end, Hall's dessert was delicious. The filling, made with sweet potatoes and spices, was smooth and complementary to the homemade crust.
