According to Fuchsia Dunlop, dan dan noodles are named after the cry of hawkers roaming the streets of Chengdu, selling food from a bamboo pole.
This is a firecracker of a dish: intensely savoury, hot with smoky chilli and tingly Sichuan peppercorns, traditionally served in small portions.
All these ingredients are widely available in Chinese grocers and online, and alternatives can be used for mustard greens if needed.
