Behold This Beautiful Sushi Hand Roll Bar That Lurks in a River West Basement
Briefly

Noriko, a new restaurant set to open below Perilla in Chicago, seeks to introduce diners to cone-shaped sushi hand rolls. It offers a cozy, chef-driven experience with a 21-seat U-shaped bar where chefs Billy Lim and Rhan Whang can showcase their creativity. The opening menu features about 20 a la carte items including hand rolls and unique creations such as edamame hummus. While omakase isn't available initially, it may be introduced later. The restaurant emphasizes high-quality, locally-sourced ingredients and inventive Japanese dishes to entice local food lovers.
We want to showcase the talent of these two guys. They're incredibly creative, and the flavors are not so typically Japanese, I'd say, it's an amalgamation of all of their travels and experiences.
It's just so flavorful, so delicious. None of us have ever had a hummus like this before. These are unique takes on classic Japanese dishes.
