Vegetarian gumbo can replicate traditional flavor using dark roux, Holy Trinity vegetables, and plant-based tofu, mushrooms, and black-eyed peas.
We've got one final opponent standing between us and the offseason: The New Orleans Saints in Week 18. The Falcons have nothing left to play for but pride at this point, and beating the Saints would get that job done. But we are talking about the Atlanta Falcons, one of the most unpredictable teams in the league, and the Saints are on a draft-position-ruining four-game winning streak. Who knows what Sunday will bring!
Many family dinners are planned ahead of time after pulling a delicious-sounding recipe out of a cookbook and making a detailed grocery list. But there are plenty of nights when this home cook just wings it based on what's lurking in her freezer, has ripened on the counter or - more often than I'd like to admit - is about to spoil in the refrigerator crisper.
Everyone has their way of making chicken and sausage gumbo, and this is my version. After looking at several different recipes, I picked out the ingredients I liked, changed the quantities a bit, and put this together. I believe my version is pretty close to Parasol's restaurant and bar in New Orleans, But mine is so good that I wouldn't change a thing!
