Easter celebrations included family dinner, a concert at The Castro Theatre, and excitement for an upcoming trip to New York.
Unlike some traditional Mexican dishes that can pack too much heat for the little ones, this version is mild and kid-friendly, focusing on savory spices and melty cheese instead of fire. I personally love to top my portion with a big spoonful of mild salsa verde for a little extra tang, but it's absolutely delicious exactly as it is right out of the oven.

In my family, Sunday was always family dinner night. Whether the Packers earned another triumphant win, a swim meet went late, or a last-minute homework assignment loomed on Monday morning, that time to eat and enjoy each other's company was an appointment that could not be canceled. When my two boys headed off to college, Sundays became more subdued. Yes, my husband and I opened a bottle of wine and enjoyed our dinner leisurely, but I craved more.
This chicken zucchini skillet bake is a hearty summer dinner that will easily serve a large family. Orecchiette pasta and chunks of chicken breasts are tossed with onion, celery, garlic, tomatoes, and red bell pepper. It's topped with pieces of zucchini that are tossed in grated Parmesan cheese. Combined, there are layers and layers of flavors in this dish. Then, after it's
