The production of dealcoholized wine employs various methods, with vacuum distillation being prominent. While this technique removes alcohol, it also impacts flavor, as some complex compounds, like passionfruit, do not survive the process. The focus on quality ingredients is crucial for creating premium nonalcoholic wines and attracting a wider audience.
"We see nonalcoholic sparkling wine as a clear entrance into the space for many drinkers," says Dorothy Munholland, co-founder of Studio Null, highlighting its role in popularizing nonalcoholic beverages.
"To get an excellent nonalcoholic result, you need to have a premium product going in," explains Catherine Diao, underpinning the importance of quality in producing dealcoholized wines.
"The note of passionfruit famously doesn't survive the dealcoholization process," says Mehmet Gürbüzer, emphasizing challenges in preserving flavors during production methods used for nonalcoholic wines.
