""Fat Cat specializes in serving wine that is produced by underrepresented communities - female, queer and winemakers of color - at a reasonable price, and in making wine accessible to people who want to explore, but feel intimidated by the industry.""
""The menu is gonna be off the cuff. Vietnamese food you can't find anywhere else. It's gonna be exciting. It's gonna be fun," said Tang."
""I wanted to showcase that Vietnamese cuisine is diverse and regional," he replied."
""Kevin and I decided, fuck it, we can share the rent. We can share the utilities..""
Fat Cat, a wine club pop-up, and Claws of Mantis, a Vietnamese pop-up, are opening a shared brick-and-mortar space at 3215 Mission St. The collaboration began over a glass of wine, as both founders faced challenges transitioning from pop-ups to a permanent location. Bell will manage the front of the house while Tang runs the kitchen. Fat Cat focuses on wines from underrepresented communities, while Claws of Mantis will offer unique Vietnamese cuisine. The partnership allows them to share costs and create an exciting dining experience.
