The charred Caesar salad at Molti Amici caught my attention. It's hard to imagine that anyone can improve on a salad that's stood the test of time for 100 years, but I love seeing the minute adjustments that take it above the average Caesar salad formula recipe.
A Caesar emulsion was drizzled on top, with fluffy clouds of Parmesan piled on, clinging to the dressing. The tiny croutons were a nice surprise I didn't expect to enjoy so much.
The pannacotta was another revelation. The choice to make the panna cotta shallower by setting it on a plate rather than the typical jar allows the strawberry glaze to really settle onto every surface of the dessert.
