It's Thai food the way mom used to make
Briefly

Valla Table, located in Hell's Kitchen, has been serving elevated Thai cuisine since 2020, the brainchild of Chef Chuck Valla. After losing a year’s worth of client reservations due to COVID-19, Valla decided to open the restaurant, where he pays homage to his family's cooking traditions. His dishes reflect authentic Thai flavors, often inspired by his travels and family recipes. Signature dishes include a reinvented Pad Thai and rice rolls filled with crab meat served with curry, emphasizing the importance of fresh ingredients and culinary heritage.
"After COVID hit, all of my reservations from my clients for the entire year was cancelled... Maybe this is the time for me to do something new or different."
"My mom knows that I don't like Pad Thai because it's way too sweet for my palate... I created that into my dish to honor my mom."
