Mazra, a popular Middle Eastern restaurant, is launching a shawarma-focused stand named Dawar 7 inside a gas station in San Francisco, expanding its reach. Owners Saif and Jordan Makableh aim to recreate authentic Jordanian shawarma experiences, where quick service is paramount. The stand will feature a limited menu with a focus on quality ingredients and traditional preparation methods, including two wraps—street and traditional—alongside rotating sides like hummus and tabouli. The project reflects Makableh's dream of opening a dedicated shawarma venue, allowing for craft-focused cuisine at its best.
It reminds us of the Middle East. In the Middle East all the shawarma is very quick. You order it and within a minute you're getting it.
This is something that I've always dreamt of opening - a shawarma-only place. When you have a place dedicated only to shawarma, you can really focus on that craft.
The craft is making sure that the fat content is just right. High-quality meat that’s heavy in marbling is key.
Dawar 7 will serve a limited menu to concentrate on delivering top-notch shawarma techniques in each wrap they sell.
