While you can fill the manicotti with a spoon, I find it easiest to use a piping bag. If you don't have one on hand, fill a plastic bag with the filling and cut off the corner.
A spoon is a classic way to fill manicotti, but a piping bag or homemade version makes it easier and less messy, reducing the risk of tearing the shells.
To fill the piping bag, place it in a Bain Marie or a tall drinking glass, then use a spatula or spoon to fill it.
Don’t fill the bag more than about 75% of the way to ensure you have enough space to hold it while filling the shells.
