Enrique Olvera, celebrated chef of Mexico City's Pujol, is hosting a pop-up in Los Angeles to celebrate the restaurant's 25th anniversary, offering locals a chance to taste his world-famous mole. From April 22 to 30, Pujol will create a tasting menu at Damian and a casual dining experience at Molino el Pujol, featuring iconic dishes. Olvera's mole madre, aged over 3,600 days, symbolizes the restaurant's legacy as an integral part of Mexican cuisine. The initiative also aims to bring hope and energy to L.A. following recent challenges.
"On Tuesday [March 11], it was 3,650 days [old], which is crazy. I feel like a grandfather now, with the mole being 10 and the restaurant being 25."
"We wanted to help revitalize a little bit of the energy. The beginning of the year was very hard for a lot of people, and we see the city trying to recover."
