"You don't see Monterrey represented too much because it's not really a tourist town," Avila says. "It's business industry there, but the food is so unique and I wanted to kind of showcase some of that."
"With some of the other projects that I've had in the past I've had to like adjust to kind of coming in," he says. "And with this one, I came in early and I'm really excited that we're getting all the toys to be able to play with."
