Soon after Ancora opened in San Francisco this summer, the owners started stamping receipts with a reminder in red text: The seafood-centric restaurant doesn't use tips.Instead, diners are charged an automatic 20% service fee.These owners have decided to replace gratuity with an automatic fee to pay workers more equitably, particularly historically underpaid kitchen staff, and hope more restaurants follow suit.
