Eleven Madison Park transitioned to a fully plant-based menu in 2021 under chef Daniel Humm, receiving three Michelin stars in 2022. The restaurant focused on sustainability and innovative vegan dishes, reimagining traditional recipes using non-dairy substitutes. However, it announced a return to animal products starting October 14, 2025. Humm stated the change is to accommodate various dietary preferences, but public reaction has been negative, questioning the sincerity of his commitment to plant-based cuisine.
Humm was committed, however, and set out to showcase vegan recipes while keeping sustainability at the forefront of his kitchen.
Humm has stated that in order to continue to encourage plant-based lifestyles, he must establish a setting in which a variety of dietary preferences are encouraged.
Humm explains on Eleven Madison Park's blog, noting that the team has listened to feedback to make the menu change.
Yet the restaurant announced on its website that from October 14, 2025, animal products will once again return to menus.
