He adopted the nickname 'Ube King' after his cookbook 'The Ube Baking Book' featured the Filipino purple yam in every recipe. Ube has been used in the Philippines for millennia and has recently grown popular globally, similar to matcha's rise. The tuber's flavor blends subtle notes of vanilla, pistachio and coconut with earthy undertones, and its vivid purple color fuels social-media appeal. Awayan grew up in Alameda as the son of Filipino immigrants and now raises his children near the bakery.
