Inside Foolproof: Williamsburg's bold 500-bottle whiskey bar Brooklyn Paper
Briefly

Foolproof in Williamsburg features a striking display of nearly 500 whiskey bottles on a backlit wall, designed to draw in guests. Opened by Andy Lock, a hospitality veteran, the bar focuses on creating a casual and enjoyable atmosphere. The menu complements the whiskey offerings, featuring dishes like sashimi-grade tartare and a favored beet-and-burrata salad. The interior design reflects Lock's childhood memories with elements like terrazzo tiles and handcrafted woodwork that create a nostalgic feel, enhancing the overall experience for visitors.
Foolproof's menu is built with spirits in mind, ranging from sashimi-grade tartare and house-cured meats to beet-and-burrata salad and French onion dip.
There's a lot of room for flavor play, Lock told Brooklyn Paper. A rich bourbon can elevate the fat in cured meats, while the brightness of a Japanese whiskey might cut through something creamy.
The 900-square-foot space reflects Lock's personal history as much as his professional chops. Leather banquettes, terrazzo tile and wood accents throughout recall his childhood in central Pennsylvania.
For me, that's a little bit of nostalgia. My mom had a few uncles who did woodworking, so we had a lot of handmade wooden tables.
