Chef David Gussin has launched Prose Kitchen & Bar in Woodland Hills, marking his first permanent restaurant. Together with his wife, Molly, they focus on California cuisine enriched with global flavors. The menu boasts items such as grilled king trumpet mushrooms and hamachi cured in citrus, while a dedicated meat section features premium cuts like a dry-aged tomahawk. Additionally, Prose has a stylish interior, a 30-seat patio, and currently offers dessert wines and non-alcoholic cocktails, with plans to enhance the drink menu in the future.
At Prose, Gussin prepares his take on California cuisine with global influences. "We feel fortunate to live in California, which teems with diversity, culture, and breathtaking nature," says Molly Gussin.
King trumpet mushrooms are grilled over binchotan charcoal, while hamachi is cured in citrus and served with charred pineapple. Beets rest in a bed of creamy labneh and black cod gets the miso glaze treatment.
A meat-focused section of the menu called A Butcher's Tale offers an assortment of cuts like filet mignon and an impressive dry-aged tomahawk for two, grilled over binchotan charcoal.
Prose currently offers a handful of dessert wines and zero-proof cocktails, and plans to expand to a full bar later this year.
