Lots of sausage casseroles require dirtying a bunch of skillets to cook sausage and veggies first, but instead we're just adding everything into a casserole dish and baking it because who has time for that on Tuesday night at 5:30PM? Not me.
Don't have green and red peppers? Feel free to use 2 green peppers, 2 red peppers, or a mixture of whatever color peppers you have (green, red, yellow or orange!).
