Mezcal Sour

Classic sours follow a simple ratio: 2 parts alcohol, 1 part citrus, 1 part sweetener. This mezcal version proves the basics are best left untouched, easy to remember and make, resulting in a timeless drink.
Keeping simple syrup on hand is advised, made by heating ½ cup water with ½ cup sugar until dissolved, then storing in the fridge for up to 2 months in an airtight container.
