At the Burgers With Buddies event at Gertrude's on February 3, 2025, chef Matt Almquist of Roberta's in Bushwick introduced his Peach Queso Burger. This innovative burger featured a dry-aged short rib patty, arugula, onion, dill pickle, and a distinctive peach queso, all held together by two Martin's potato buns. Almquist aimed for a rich, decadent experience and described the sauce's blend of flavors from Mornay base to fermented peach juice. The burger's balance of sweetness, acidity, and richness made it a standout among Brooklyn's food scene.
The star of the show is the queso, which derives its flavor from a Mornay sauce base, dry-aged beef fat, fermented aji dulce, piparra and sugar rush chiles.
Almquist said he was looking to create something 'a little over the top' with his burger, trying to evoke satisfaction with an indulgent flavor experience.
