Sweet Potato Pie

The pie is really pretty simple. If you cook the sweet potatoes the day before, you can put this pie together in a jiffy. Many claim that it is far more delicious and nutritious than its close relative: the pumpkin pie.
Pre-Heat oven to 350 degrees. Boil sweet potatoes until fork tender. Cool, drain, and peel sweet potatoes. Mix all ingredients in stand mixer (or with hand-mixer). Pour into unbaked pie crusts. Bake for 55-60 minutes until firm. Top with whipped cream and enjoy.
