Wing Lei oozes elegance, but not in a Vegas-gaudy kind of way. It's a spectacle for sure, but with quiet gentility requiring a backpedal from the bustling energy surrounding most of the Strip. Hash House A Go Go, a Midwest-inspired restaurant gem that won't wreck your wallet - while still plating extraordinarily large portions of tasty homestyle food. It's generally known for its breakfast and brunch specialties, with the venue closing at 3 p.m. on most days. On the warm, rounded tables of thick slab oak, chef Anand Singh - who earned fine dining credentials at Rosewood Las Ventanas in Cabo San Lucas - serves folded raw hamachi slices topped with tiny dabs of curry and a maroon-colored pool of tamarind ponzu that wouldn't feel out of place at a Nobu. A proper spoon swipe indents a celeriac puree topped with edamame and microgreens next to a portion of banana leaf-roasted Chilean sea bass.
