The main focus of Canto VI is wine, which Kalliel sources himself. The wine list rotates weekly, with glasses starting at $18 a glass. With the higher entry point, Kalliel focuses on offering rare and higher-end bottles.
While other wine bars may buy bottles wholesale for $20 or $25 a bottle and sell it at $18 a glass, Kalliel says his chardonnay costs $55 a bottle and he sells it at $25 a glass. He features 10 wines on the daily printed menu, plus six more on a constantly changing chalk menu.
