The Bazaar, located in the Waldorf Astoria on Pennsylvania Avenue, will close on March 11 after three years of operation. José Andrés Group will replace it with Bazaar Meat, a theatrical steakhouse concept already operating in Chicago, Las Vegas, and New York, with additional locations planned for Miami and Los Angeles. This marks the first Bazaar Meat location in Washington, DC, and returns a steakhouse to the historic Old Post Office Building, previously home to BLT Prime. The menu features large-format cuts including ribeye chuleton and Japanese wagyu, alongside Spanish-style whole suckling pig, jamón bar, and signature dishes like cotton candy foie gras and caviar cones. The beverage program includes themed cocktails referencing the building's history and Spanish wine selections.
