I'm trying to create a space for Indigenous peoples to feel like, 'This is my seat, this is my table, this is my family, this is my food.' It's so crazy that we're in one of the biggest food cities but there's no Native American restaurant. There's no representation in that way - as a Native person, I can't just go sit in a restaurant that's focused on first foods.
A mat gets rolled out in the longhouse and everybody gets salmon, roots, berries, boiled potatoes, and corn, and it's all served in a family-style sense. The feeling I want to invoke for the diners is a little bit of that communal experience.
Oraibi by Javelina will take up residency at Kolectivo from mid-December until February 2025; this will be Kolectivo's first time hosting a chef in such a format. At the Southeast Division space, Numkena-Anderson will serve six-course dinners that incorporate storytelling and start with smudging sweetgrass, a practice that invokes protection and repels negative energies.
