"The pop-ups have been great and very successful for us, but I am really excited to be in my own space and just do a lot more with the menu," said Blachman-Gentile, who anticipates expanding offerings beyond pizza to include revolving entrees like whole fish and chicken parmesan. He aims to create a vibrant atmosphere reminiscent of classic pizza parties, fostering a sense of nostalgia while serving New York-style pizza with a unique twist.
"Nostalgia is one of the most important things for restaurants," he said. "With pizza, you want to reference a little bit of that Americana nostalgia because I think everyone grew up, to some extent, having pizza with their family or after a game, that's what makes it special." Blachman-Gentile's approach demonstrates how culinary experiences tied to memory can influence restaurant design and community engagement.
