Bub's Bakery, opened in NoHo in September 2025, is the first dedicated allergen-free bakery in the city. Founded by Jenn Saesue and Melissa Weller, it aims to provide baked goods free from the top nine allergens, including soy, eggs, dairy, and nuts. Initially focused on gluten, the menu expanded to include a variety of treats like cinnamon rolls and cupcakes. Saesue's personal experience searching for an allergen-free cake inspired the bakery's creation, and recipe development took two and a half years to ensure great taste without allergens.
