The bacon, egg and cheese (BEC) sandwich is an iconic symbol of New York City, commonly found at bodegas. Due to inflation and a severe avian influenza outbreak, egg prices have skyrocketed, forcing many delis to increase BEC prices significantly. About 50% of delis, according to Francisco Marte, have had to raise prices to remain profitable. In response, some vegan food companies, like Just Egg, are promoting plant-based alternatives, aiming to keep the BEC iconic yet affordable amidst rising costs.
‘All the major retailers, from big convenience stores to restaurant chains, are reaching out to us now saying, Hey, what’s up with this plant-based egg?’ said Tetrick.
‘About 50% of delis had to raise prices on BECs to make a profit,’ said Francisco Marte, highlighting the impact of rising egg prices and inflation on bodegas.
