A top Sapporo ramen chef is popping up in NYC this month
"Hiroshi Hiraoka, one of the most respected ramen chefs in Japan and the chef-owner behind Sapporo's Japanese Ramen Noodle Lab Q, is heading to New York City this month for a series of limited-time pop-ups at two Manhattan restaurants. The events will bring his refined "tanrei" style ramen, rarely experienced outside Japan, to diners at Towa in Flatiron and nonono in NoMad."
"If you're more familiar with the rich, porky bowls typical of tonkotsu ramen, tanrei is a different beast entirely. The style is defined by a crystal-clear broth and delicate balance of flavor rather than heavy richness. Hiroshi Hiraoka, chef-owner of Sapporo's acclaimed Japanese Ramen Noodle Lab Q, is visiting New York City for limited pop-up events featuring his signature tanrei ramen style. Unlike rich tonkotsu ramen, tanrei emphasizes crystal-clear broth and delicate flavor balance, crafted with premium ingredients including Hokkaido pork bones, jidori chicken, kombu, and house-developed noodles. At Towa in Flatiron, Hiraoka collaborates with chef Masaya Shirai on a ramen-kaiseki tasting menu March 21-22 and 28-29, featuring two ramen styles integrated into a multi-course progression. At nonono in NoMad, guests can order his ramen a la carte from March 30 through April 4. Hiraoka's credentials include founding his Sapporo restaurant in 2014, winning TV Tokyo's World Ramen No.1 Championship, and maintaining a spot on Tabelog's Top 100 Ramen Restaurants list for eight consecutive years.
