Mezcal de Pechuga is a beloved Oaxacan tradition, where the addition of turkey breast during distillation imparts a unique flavor to the mezcal. Each family of mezcaleros creates their own recipe, often using ingredients from their region. The Hernández family, who have been distilling mezcal for six generations, brings their own take on this revered process. Led by brothers Daniel and Tucho (Cosme) Hernández, they adhere to artisanal methods such as cooking the agave in underground stone ovens and milling it with a tahona stone.
Founder Dr. Jorge Vera, who has also served as the president of the Mezcal Cluster, an association focused on preserving the authentic traditions of mezcal production, shares his thoughts: "Convite Pechuga has a very special flavor profile and is best enjoyed neat, surrounded by friends and family."
