Israeli chef Michael Solomonov, a five-time James Beard Award winner, is set to open Aviv at 1 Hotel South Beach on March 14, 2025. The restaurant, designed for 132 guests, will feature a menu inspired by over 17 years at Zahav but will also incorporate local Miami influences. Solomonov emphasizes the importance of adapting traditional Israeli cuisine to reflect Miami's cultural landscape, drawing parallels between the two cosmopolitan cities. His business partner Steve Cook also highlights the advantage of using seasonal produce that aligns more closely with the climate in Israel to enrich their culinary offerings.

One of the things we talk about a lot is how southeast Pennsylvania and its growing season is nothing like Israel.
Miami is a lot closer to the kind of climate you find in Israel. It's cool to be working with produce that's not in season in Pennsylvania most of the year.
This is the product of two decades of exploration and trying to tell the story of Israeli cuisine.
