Why are so many London restaurants introducing a 'minimum spend'?
Briefly

Several high-end restaurants in London, particularly in Mayfair, have implemented a minimum spend requirement for diners to mitigate the financial impact of cancellations and no-shows. Notably, Gymkhana, a two Michelin star establishment, has set a £100 minimum spend per person to address these problems. Other restaurants have followed suit with varying minimums, while some, like Dorian in Notting Hill, have introduced deposit schemes to deter what has been termed 'reservation-squatting,' where diners reserve spots at multiple venues but show up at only one.
"In part due to the number of cancellations and no-shows we were seeing per service...meaning a loss of income for the restaurant."
"People making reservations across different restaurants for the same night, but only turning up for one of them...this 'reservation-squatting' behavior leads to hospitality losses."
