Haltiwanger's pop-up Calabama, born from isolation during the COVID-19 lockdown, is now transitioning to a permanent Hollywood location, proving community and joy can thrive even in tough times.
"I want to keep this shockingly simple, Southern, and country," Haltiwanger says. "I didn't open a restaurant to do an extensive menu." This reflects her desire to focus on authenticity.
Haltiwanger expresses the challenge of owning a restaurant, stating, "I think a lot of people romanticize running a restaurant. To me, it takes away the part that I love."
Her journey began in 2009 with pop-ups from unique locations, serving Southern delicacies that resonated with her childhood, highlighting the essence of community in her culinary approach.
