"When Isla debuts Oct. 24, patrons will discover that Murdock's grandmother's jerk recipe is behind a smoked and grilled chicken dish; her sister-in-law's mango-mustard pepper sauce - "We call it ketchup," Murdock says - materializes when customers request a flavor boost; and her mother-in-law's dreamy carrot cake anchors the dessert menu. While she's bringing along some of the dishes from her popular Toronto restaurant, Miss Likklemore's, Murdock says she's excited to share "classic Caribbean dishes - but in a more refined way.""
"The roaring wood-fired grill in her semi-open midtown kitchen lends smoke, ash and sear marks to everything from barbecue-style greens (side item) and pumpkin (seasonally inspired gnocchi) to the signature jerk chicken (with jus bolstered by "just a splash of sherry vinegar") and a bone-in pork chop sporting a "hard crust" of charred cumin, annatto, coriander and mixed peppercorns (flanked by grilled mango)."
Isla opens Oct. 24 in downtown D.C., led by self-taught chef-restaurateur Lonie Murdock and highlighting Jamaican, Guyanese and Afro-Caribbean influences. Family recipes inform menu staples including a smoked and grilled jerk chicken, a mango-mustard pepper "ketchup," and a carrot cake. A semi-open kitchen with a roaring wood-fired grill adds smoke and char to items such as pumpkin gnocchi, barbecue-style greens, seared scallops with ginger beurre blanc, and a bone-in pork chop with a charred-spice crust. The menu also features Guyanese-style rice with lobster, Thai snapper crudo with passion fruit, and a dedicated bara fry-bread section.
