Simon Kim opened Cote Korean Steakhouse in Flatiron in 2017 and expanded locations to Miami, Singapore, Las Vegas, and back to New York. Plans include a three-level Midtown venue called 550 Madison with a Grand Central–like ground-floor bar, another Cote downstairs, and a sushi restaurant upstairs. The buzziest concept in his Gracious Hospitality Management group is Coqodaq, a Flatiron Korean fried chicken spot known for viral chicken nuggets topped with caviar. Korean fried chicken traces its popularity to American GIs in the 1950s, and South Koreans have since adapted the Southern dish. Kim was born in Seoul and moved to Long Island at 13. His daily routine includes waking around 6 a.m., tending to his bernedoodle Teddy, listening to Japanese and Gregorian chants, and drinking lukewarm lemon water morning and night while balancing constant tastings and restaurant openings.
