Pujol, chef Enrique Olvera's two-Michelin-starred restaurant, will run a 12-night residency in New York City from November 11–22 at WSA, 161 Water Street. Service will include two nightly seatings at 5pm and 8pm, and reservations open October 1 via Resy. The eight-course tasting menu will likely showcase hallmark dishes such as the mole madre aged for years alongside a fresh mole each night and street-food-inspired bites like smoked baby corn served in a hollowed-out pumpkin. Olvera frequently centers courses around nixtamalized corn tortillas made in-house. The tasting menu is priced at $295 with an optional $195 beverage pairing.
