La Popote, a converted redbrick barn restaurant in Marton, introduced a curated water list alongside its menu and a 100-plus bottle wine list. The owners, chef Joe Rawlins and Gaelle Radigon, live above the restaurant with their children. The water list offers seven choices ranging from local Crag from the Peak District to mineral-rich Vidago from a Portuguese spa town that costs 19. Doran Binder serves as a water sommelier and promotes water connoisseurship as part of a global movement to elevate water as a celebrated drink. Binder encourages experimentation despite scepticism, and staff recommend waters such as Lauretana or Icelandic Glacial for a crab starter.
