Eugeniu Zubco launched Yūgin, a 12-seat omakase counter on the 37th floor of the General Motors Building in Midtown Manhattan. Service runs about 2.5 hours and is priced at $475 per person before tax, supplements, and drinks. Zubco trained for ten years at Masa, rising from wok station to chef de cuisine, and brings culinary experience from across Europe and Vietnam to his omakase approach. The space features two six-seat counters carved from a 200-year-old hinoki tree and courses presented on antique and custom ceramics. The restaurant emphasizes luxury, technique, and skyline views.
