Flynn McGarry spent the summer preparing to launch Cove, a fine-dining restaurant on Houston Street in West SoHo. He divided time between the city and Isabella Rossellini's 28-acre Mama Farm in Brookhaven to grow herbs and vegetables for the restaurant. McGarry staged small, ambitious multicourse dinners en plein air at dusk to test menus and cultivate a farm-driven team culture. Guests at the dinners included friends and notable figures, and backers include George Loening. McGarry made remote construction and menu decisions while shuttling between town and country. He intends to transfer the farm's sensory energy into the Manhattan tasting-menu experience.
