Move over matcha lattes: horchata is cold, creamy and coming to a menu near you
Horchata is a refreshing, creamy cold drink from Spain and Mexico, often compared to cereal milk. It is traditionally part of the dairy- and alcohol-free aguas frescas family, typically made by soaking, grinding, and sweetening tiger nuts in Spain, or using rice and cinnamon in Mexican-style versions. It is commonly served with fartons, Valencian pastries. Recent menu trends show horchata appearing in coffee drinks, including Starbucks’ returning iced horchata shaken espresso and a new horchata frappuccino, alongside “dirty” versions with espresso in the UK. Social media recipes encourage making horchata at home, sometimes adding milk. A visit to a London market includes purchasing horchata concentrate and trying a prepared drink with evaporated milk and crushed walnuts.
"For 6.50, I pick up a bottle of Mexquisita horchata concentrate enough to make 5.6 litres, which seems like a lot. Confident in my ability to get it wrong, I also purchase a freshly prepared version. Adriana, who whips up my beverage, tells me it's a popular drink with her and her friends they like to add evaporated milk and top it with crushed walnuts."
