At Romeo's in New York's East Village, founder Evan Hawkins creates cocktails inspired by iconic local desserts. The latest menu features a drink based on Claud's famous Devil's Food Cake, known for its indulgence and limited availability. Hawkins invested time in perfecting the recipe, eventually using real chocolate cake to balance the flavors. This innovative approach showcases how culinary inspirations can transform traditional cocktails into unique experiences, merging baking artistry with mixology in a vibrant cocktail culture.
The process took a lot of trial and error - about 14 different iterations, according to Hawkins - but he was set on finding the right balance between the chocolate and the confectionary notes.
It’s so iconic that the restaurant even released a custom candle that resembles a thick, perfectly glazed piece of cake.
