Star Brazilian Chef Junior Borges Sets His Sights on Chicago

Pieces of my menu will highlight flavors and ingredients that I grew up eating as a Brazilian. I think that's the best way to educate people about a cuisine or culture.
Borges has honed a novel approach toward his homeland's food over two decades, giving Americans a deeper understanding of Brazilian cuisine that goes beyond sizzling steaks.
The restaurant will offer both casual and formal experiences, featuring a six-course prix fixe menu that allows Borges to play with Brazilian and Italian influences.
Borges is part of a growing contingent of Black Brazilian chefs, and has long dreamed of opening a restaurant serving Afro-Brazilian cuisine in Chicago.
