Square Pie Guys, popular for Detroit-style pizza, has launched a new pop-up called Bar Pie Guys, focusing on Chicago's tavern-style pizza. This pizza features a thin, crispy crust and robust flavors, making it a perfect accompaniment for beer. Owner Marc Schechter's inspiration comes from his childhood experiences with East Coast bar pies. The launch coincided with fundraising efforts for L.A. wildfire relief, demonstrating a strong community focus. Their tavern-style pies include unique toppings, maintaining a connection to their Chicago roots while innovating on flavors.
That style of pizza, it's so thin, and the sauce and the cheese are more robust flavors than the dough, and the crunch and the little bit of char on the crust is kind of addicting.
We began experimenting with tavern-style pizza as a team exercise. Then, the Los Angeles wildfires hit, which led us to make bar pies for fundraising efforts.
